Peel and grate the zucchinis. Chop the scallions
and add to the grated zucchini.
In another bowl mix 3 eggs and the flour. Then
add salt, black pepper and chili pepper. Lastly add the grated zucchini and the
chopped scallion. Mix them all.
Add some palm oil to the frying pan. When the
pan is hot, add your dough to the pan little by little and perform the frying
process.
You can eat your zucchini hash browns both warm
and cold. Enjoy!
