Carrot Cake with Walnuts
Ingredients:
- 2 cups self-raising flour
- 4 eggs
- 1 1/4 cup red Palm oil
- 3/4 cup brown sugar
- 2 tsp vanilla essence
- 2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- a pinch of mixed spice
- 3 cups grated carrots
- 1/2 cup chopped walnuts
- 1/2 cup raisins
Icing:
- 250 gr cream cheese, softened
- 1/2 cup margarine
- 1 cup icing sugar
- 1 tsp vanilla essence
- 1 cup chopped walnuts
Method
- Preheat oven to 175 C. Grease and line a 9×13 inch pan.
- In a large bowl, beat together eggs, red palm oil, brown sugar and vanilla essence. Mix in flour, baking soda, salt, cinnamon and mixed spice. Add carrots. Fold in walnuts and raisins. Pour into prepared pan.
- Bake for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let it cool in the pan for 10 minutes before putting it onto a wire rack to cool completely.
- For icing, beat cream cheese, margarine, icing sugar and vanilla essence until smooth. Add chopped walnuts. Spread over cake.
