Wholemeal Waffles
Ingredients
Flour Mixture
- 300 gm wholewheat flour
- 30 gm wheatgerm
- 1 tsp fine salt
- 2 tasp instant dried yeast
- ¼ tsp bicarbonate of soda
Milk & Egg Mixture
- 300 ml milk
- 30 ml sweetened creamer
- 2 tsp vanilla extract or grated rind of 1 lemon
- 50 ml Malaysaian palm oil
- 4 large eggs
Method
To prepare Batter
Place flour mixture in a large mixing bowl and make a well in the centre. Pour in milk & egg mixture. Gradually incorporate the flour mixture into the wet ingredients until you have a smooth batter. Cover bowl and leave to rise at room temparature for at least 1 hour. The batter can be prepared ahead and stored overnight in the refrigerator; stand for 1 hour at room temperature before using.
To Cook Waffle
Preheat electric waffle maker, brushing the mould with Malaysian palm oil. Fill mould with batter until almost full, lock down the lid and cook until golden brown and crisp. Remove waffle to cool on a wire rack.
To Serve
Serve with jam, maple syrup or honey, and margarine or whipped cream.
